T APPEARS to be a sad fact that nobody nowada: can make such pies as‘ mother used to make. Inall parts of the country we hear the same com- plaint—in Maine as well as in Mississippi, in Flori- da ag well as in California, Everywhere you go you will hear men of all professions repeating the same direful verdict—clergymen, lawyers, poets, butchers, bakers, candlestick-makers, barons of fi- nance, captains of industry—all lamenting the de- cadence of the pie. They do not tell us wherein the pie of to-day is deficient—whether it lacks resilience, is deficient in solidarity, is devoid of the enduring qualities that made the ancient pies as imperishable as the immortal hills; they simply taste, sigh, turn their heads away, and murmur, ‘Good, yes, but not like mother used to make." Why is it, we wonder? Has woman's deftness of touch gone? Is your mod- ern woman not 80 good a mixer as her foremothers? Have we become so surfeited with pastry that the pies do not taste the same? Is there anything the matter with the raw materials used—the apple, the rhubarb, the golden pumpkin, the squash, or the huckleberry? Is there anything wrong with our sugar, milk, and flour? We have thought about it long and anxiously, and we do not think it is any of these things. Our women of to-day are us deft as ever their mothers were, and sugar still is sugar, just as apples are apples, and the luscious huckle of the berry whortles on as sweetly as of yore. We are impelled to believe that the real cause is that the modern mother is kept too busy playing bridge to have much time for pie. Of sitting on a cactus.
