A young man named Bob learns the meat industry from ranch to consumer through a guided tour. After an unsuccessful attempt at ranching, Bob is taken by Uncle Jim to a meat processing facility where Mr. Jackson explains the complete process: how cattle are dressed, inspected for quality and health standards, graded, and processed for distribution. The story concludes with Bob boarding a train eastward, where he encounters refrigerated rail cars and learns about the historical innovations—including Gustavus Swift's development of insulated ice-boxes—that made it possible to ship fresh meat across the country to markets and homes nationwide.
